love fried chicken. LOVE. My Mom makes the best deep-fried chicken I've ever tasted. I do not. It's either burnt on the outside/raw on the inside, soggy, not dark enough, etc. I now stick with the pan fried chicken. My favorite up until tonight was a "picnic" fried chicken (refrigerate it and it stays crisp to take on your picnic. Tonight I tried Cook's Illustrated's version - soaked all day in buttermilk, salt & pepper - coated in flour/salt/pepper and fried in shortening. This was by far the best pan-fried chicken I've ever made (or ate). served with corn on the cob (I know - we eat it a lot of it during the summer) & coleslaw (sweet & sour vinaigrette).
I'm now sitting in chicken bliss playing SSX 3.
